Pick-your-own-strawberries farm in Meyrin, Switzerland
1,5 kg of strawberries washed, de-hulled, the big ones are halved
Add a mix of 200g muscovado and 200g Demerara sugar
300g of granulated white sugar, juice from one lemon and let it sit for 12 hours
Add vanilla pods and bring the mixture to a boil. Skim the foam
Bring to a simmer and stir occasionally.
Once the mixture starts to thicken, remove pan from heat, carefully blend with hand blender
Put on heat again, for another 10 minutes
Fill cleaned and sanitized jam jars up to the top
Close with lids and turn the jars upside down until they are cold.
